New seasonal menu launches on 20 March 2017

Mother’s Day is the perfect excuse to try out the new Spring Menu at Farmer, Butcher, Chef, the recently-opened sustainable restaurant on the Goodwood Estate.

Available from 20 March, the new menu is bursting with fresh Spring ingredients including wild garlic, broad beans and samphire sitting alongside our signature cuts of organic beef, pork and lamb from Goodwood Home Farm.

Mums and daughters can even stay the night as part of our indulgent Mother’s Day package, available only on 26 March. Enjoy a dinner for two plus a stay at the Goodwood Hotel and a pampering treatment at The Waterbeach*.

Goodwood’s group executive chef Darron Bunn says: “Farmer, Butcher, Chef celebrates unusual cuts of meat that lend themselves to slow-cooking, which was perfect when we launched just before Christmas. The challenge now is to keep delighting our fans with a seasonal twist on our dishes. We have added a bit of zing to the menu, adding new ingredients and keeping everything very fresh.”

Crusted Ox Cheek is teamed up with langoustine and asparagus, our award-winning Pork Belly is rubbed with honey and sage and served with rhubarb and apple and there is a new dish of Wood Pigeon and Mushroom Pie served with artichokes and slow-cooked beetroot. 

Inspiration for Goodwood’s latest food venture, which is located next to The Goodwood Hotel, comes from the relationship between farmer Tim Hassell, butcher John Hearn and chef Darron Bunn. They work together to create the frequently-changing and diverse menu that showcases Goodwood’s organic farm produce.

Not many can control every aspect of their produce in the way Goodwood can. From the fields where livestock graze to the in-house butchery and eventually to the kitchen – where the dishes are created – Goodwood oversees the whole process.

The butcher is directly involved in designing dishes according to what cuts are available. An original approach that means nothing is wasted. Not only does this show the utmost respect for the animals, but it allows guests to enjoy unusual and rare cuts, bringing nostalgic cooking back to life.

With Spring now firmly on our doorstep, there is no better time to treat Mum to a well-deserved break in beautiful West Sussex countryside, feasting on delicious organic food.
