Chilled Cucumber & Kefir Soup Recipe

Enjoy this light sweet and sour summery soup Cucumber & Kimchi recipe that is not only simple to make and delicious, it's full of gut-friendly probiotics.

Gut-friendly Kefir is a cultured milk drink originating from the mountainous region between Asia and Europe. It has a tangy flavour that compliments the fresh sweet taste of hydrating and vitamin-rich cucumber. Both provide a boost for gut health with this delicious light summer soup recipe.

WHAT YOU’LL NEED:

1.2kg Cucumber (deseeded)
350ml Goodwood Kefir
100ml Yoghurt
25ml Lemon juice
10g Basil
10g Fresh dill
1 Clove garlic
¾ tsp Salt
¼ tsp Pepper
½ tsp Goodwood Honey (Optional)


METHOD:

• Place all ingredients in blender and blitz until smooth

• Pass through a fine sieve, check the seasoning, and then chill to serve

• Garnish with some fresh dill

• Enjoy
