Our Executive Chef, Mike Watts, shares how to make a tasty Red Pepper Dressing

Are you fed up with limp lettuce and bland salad leaves when it comes to your summer picnics and lunches, but reluctant to wade into commercial dressings in case you undo all your great gut health work so far?  Our Executive Chef, Mike Watts shares his tasty Red Pepper Dressing which you can easily make and store in the fridge for 3-4 days until it’s all used up. And, if you want to make it creamier, just add in some pre-soaked cashew nuts before blending.

Recipe

Ingredients: 

1 red pepper (raw or roasted)
1 clove garlic
Half teaspoon grated ginger
120ml avocado or olive oil
15ml raw apple cider vinegar
1 pinch good quality Himalayan or Celtic sea salt

Method:

Place everything in a blender and whizz together until smooth.
