Earl Grey Tea Loaf

While Mary Berry was at Goodwood she spent some time with Susan, Duchess of Richmond and together they baked this delicious Earl Grey Tea Loaf.

Tea flavoured with bergamot, which was used to imitate the more expensive types of Chinese tea, has been known in England since the 1820s. The Earl Grey blend, is assumed to be named after Charles Grey, 2nd Earl Grey who was Prime Minister in the 1830s. He reputedly received a gift, probably a diplomatic one, of tea flavoured with bergamot oil. Its distinctive refreshing flavour has made it a popular choice for drinking during the afternoon.

This simple recipe is quick and easy to make and is perfect for afternoon tea.

Ingredients:

350g          mixed dried fruit

300 ml       strongly brewed Earl Grey tea

225g          soft light brown sugar

275g          self raising flour

1                lemon – zest and juice

1                large free range egg

1 tsp          mixed spice

pinch of salt

Method:

  • Soak the fruit with the tea and the sugar overnight
  • The following day fold in all the remaining ingredients
  • Place the mixture into a lined Bread Tin
  • Bake at 150 degrees for 1 – 1 ¼ hours until well risen and a knife comes out clean
  • Leave to one side on a wire rack to cool before eating.
