Gut Friendly Avocado, Chipotle & Tomato Salsa

Creamy, nutrient-rich avocados are naturally high in Vitamin E and wonderfully easy to digest. Paired with juicy tomatoes and a kick of warming spice, this vibrant salsa is bursting with fresh flavours and antioxidant goodness. Perfect served alongside fish, poultry, meat or crunchy dehydrated crackers, it’s a simple yet irresistibly addictive addition to any dish.

Ingredients

1 tsp dried chipotle chilli

5g fresh root ginger, finely grated

1 tbsp lime juice

1/2 grated lime zest 

20g spring onions

pinch of ground cumin

pinch of sea salt

10g fresh mint, chopped

10g fresh coriander, chopped

1 tbsp extra virgin olive oil

150g cherry tomatoes, quartered

200g avocado, peeled, stoned and diced

Method

Soak the dried chipotle chilli in warm water, then chop it finely.

In a large mixing bowl, mix the ginger, chilli, lime juice and zest, spring onions, cumin, salt, mint, coriander and olive oil.

Add the cherry tomatoes, then mash with a fork to bruise.

Add in the diced avocado and mix together.

Note: If you like your salsa hot and spicy, add more chilli.
