Gut Friendly Coconut, Poppy Seed, Ginger and Lime Muffins

Gut Friendly Coconut, Poppy Seed, Ginger and Lime Muffins

Ingredients 

Makes 12 muffins

80g coconut oil (plus extra for greasing the muffin tin)

3 organic, free-range eggs

200ml coconut milk

Seeds of 1 vanilla pod

10g ground ginger

100ml Goodwood runny honey 

15g poppy seeds

Grated zest of 1/2 lime

1tsp baking powder

40g coconut flour 

300g fresh raspberries

Fresh coconut and mint leaves to garnish

Method

Preheat the oven to 180 degrees, Gas Mark 4

In a small saucepan, gently warm the coconut oil - it should be body temperature rather than too warm.

Pour into a large mixing bowl, add the eggs, coconut milk, vanilla seeds, ginger, honey, poppy seeds and lime zest. Whisk together to make an emulsion.

Mix in the baking powder with the coconut flour, then sift it into the wet mixture. Using a metal spoon, stir to make a batter.

Divide the mixture between 12 muffin cases or a lightly oiled muffin tin.

Bake in the preheated oven for 15 minutes, until the muffins are risen and golden brown.

While the muffins are cooking, purée two-thirds of the raspberries. Sweeten to taste with honey if you wish.

Remove the muffins from the oven and set them aside to cool for 10 minutes.

Serve warm with the raspberry purée, garnished with the remaining raspberries, fresh coconut and mint.
